After months of contemplation, I ultimately stepped out of my comfort zone and started Tiffin's first food outlet at The Foundry @18 Mohd Sultan Rd. The owners had adopted a pretty cool concept of a neighbourhood beer alley broadcasting live football and other sports. Moreover, they also feature a wide range of beer that goes well with North Indian food. After sourcing all the necessary kitchen equipment and cutlery for the outlet, Tiffin North Indian Tandoori was ready to operate by 1st June 2010. - Everyone knows that “tiffin” means lunchbox... However, to Hindustanis, a Tiffin contains not only food, but also represents the undying love from a Mother to her child… Mothers in India prepare lunch daily without fail, to be sent to their children in schools or at their workplaces, only to ensure that her child enjoys hot, healthy and delicious homemade food. The meal is usually stored in a tiffin, then dispatched to the child via a “tiffin-wala” (Hindi word for tiffin-deliveryman). The child then gets to savour the delectable homemade fare which tames his hungry belly and warms his heart. Think the above sounds like an advertisement plot? Well, in most Asian culture, love is expressed in a rather subtle manner. Just like how Mothers convey their love for her child through a simple Tiffin, I decided that “Tiffin” would also well represent my passion and dedication towards good North Indian food…
